Smoked Chorizo Tacos

Ingredients:

  • 3 T olive oil
  • 1 lb ground beef
  • 1/2 lb dried chorizo
  • 1 poblano pepper diced
  • 1 yellow onion
  • 3 cloves garlic minced
  • 1 T ground cumin
  • 1 T chile powder
  • 2 t ground corriander
  • 1/2 jar of Bunches & Bunches Smoked: Oxacan Mole Sauce
  • 1 lime
  • 1 bunch of cilantro
  • salt & pepper to taste
  • Love, the most precious ingredient!

1. Brown beef and chorizo together in olive oil on high heat until fully cooked. 

2. Drain off most of (not all) of the rendered fat.

3. Add diced poblano, onion, garlic and spices, reduce heat to medium, stir often and cook until tender. Add Bunches & Bunches mole and cook for 5 minutes until poblano and onion is soft and tender.

4. Add remaining ingredients (lime, cilantro), toss and serve. Serve with corn or flour tortillas, cheese, gaucamole, sour cream…slather on more mole and enjoy!
